
If you're tired of making the same old cake, or you simply want to supersize your favorite sugary treat, then this next recipe is for you. The Giant Jelly Donut is a jaw-dropping confection of epic proportion. I’ll admit it’s a little intimidating for a first-timer, but I promise that the finished product is not only a show-stopper at any party or event, but it's also incredibly delicious.
Baking guru Elise of My Cupcake Addiction is here to demonstrate how to whip up the mega-sized jelly (or jam) donut. No fancy ingredients here — just flour, sugar, eggs, whole milk, cinnamon, vanilla, oil, butter and raspberry/plum jam (or whatever fruity flavors you love the most). You'll end up making a double batch of cake to make "one heck of a jam donut."
According to Elise, here are the directions:
- Place butter, sugar, vanilla, oil and eggs into a mixing bowl
- Beat on high speed with an electric mixer (whisk or paddle attachment) until ingredients are well combined and appear light and fluffy (approx 1 -2 minutes)
- Combine baking powder (if using) cinnamon and flour together and stir
- Add flour mixture and milk to creamed mixture
- Beat on high speed until flour is completely mixed through (approx. 30 seconds – 1 minute)
- Thoroughly grease and partially line one 8″ x 3.5″ (approx) oven safe bowl before filling with the mixture to about 1″ from the top
- Bake @ 175c/350f for 50min – 1hr testing with a skewer after 45mins
- Your cake is done when a skewer comes out clean
