When I think of summertime, one of the first things that pops into my head is the refreshing taste of an ice cold lemonade on a sweltering hot day.
As a kid I used to sit on the street corner with my homemade signs, selling glasses of lemonade to neighbors to make a little extra cash, which I would in turn use to buy treats from the ice cream truck that would drive by.
Now that I am an adult, I still enjoy my summertime lemonade (sometimes made into an adult beverage with a little splash of vodka), or in the form of a delicious lemonade popsicle, and after watching this recipe, I will definitely be making the cookie version of my favorite summertime drink.

Ingredients:
(Makes about 2 dozen large cookies)
- 6 cups flour
- 3 tsp. baking powder
- 2 cups butter
- 2 cups sugar
- 2 eggs
- 2 tsp. lemon extract
- 1 tsp. salt
- Yellow food coloring
- Zest of 1 lemon
Directions
- In stand mixer, combine flour, baking powder, butter, sugar, and eggs until smooth.
- Add in lemon zest, extract, and food coloring until you get the color desired.
- Place dough in refrigerator to chill.
- Shape generous sized balls of dough into lemon shape.
- Place on baking sheet and put in freezer for 15 minutes to help the shape hold.
- Bake at 350 °F for 13–15 minutes.
Sprinkle with powdered sugar and enjoy on them on their own, or whip up a batch of lemonade to make this dessert extra summery!
