He Uses 24 Ice Cream Sandwiches To Make The Easiest Ice Cream Cake Ever

My favorite part of any meal is the dessert.

I am always on the lookout for new dessert recipes, but it's often hard to find ones that aren't extremely complicated. Luckily for me, I found a brilliant and simple recipe to make a homemade ice cream cake out of tasty ice cream sandwiches. I knew I had to make this right away.

In fact, I knew I wanted to share the end-result with others, so I decided to make this ice cream sandwich cake right here in the LittleThings office. It was difficult to keep my co-workers at bay while I was making the cake, but I think they would all agree that it was worth the wait. Everyone was more than happy to sample a slice, and they were gushing about the delicious results.

Ingredients:

  • 6 brownies
  • 2 containers frosting
  • 24 ice cream sandwiches
  • Sprinkles
  • Candy for topping

To make this delicious ice cream sandwich cake, you'll be able to use a lot of your own creativity. We used Neapolitan ice cream sandwiches, vanilla frosting, and M&Ms for topping, but you can easily switch those up!

Lay 6 brownies on a cake plate and cover the tops of them with a layer of frosting.

Lay 4 ice cream sandwiches along one side. Lay 2 more long ways. One of the ice cream sandwiches will be too long, so you can break the excess off. Each ice cream sandwich layer will use about 5 and 2/3 sandwiches. Use a knife to cut off the excess brownie.

Add a layer of frosting on top of the ice cream sandwiches.

Lay down a second layer of ice cream sandwiches.

Frost the second layer, add a third layer of ice cream sandwiches, and then frost that layer as well.

Lay down a fourth and final layer of ice cream sandwiches.

Now you get to frost your cake! If the ice cream is too melted, freeze the cake for a bit before applying the frosting.

Cover the cake with frosting completely and then decorate with sprinkles.
