After spending time in Switzerland, my love for cheese only grew more intense. There may be no greater dish celebrating cheese than Swiss raclette, a semi-firm, cow's milk cheese that is mostly used for melting, but is also used to make one over-the-top grilled cheese!

As demonstrated in the video, the cheese round is heated, either in front of a fire or by a special machine, then scraped onto diners' plates. The heat makes the top layer melt, bubble and char — making it absolutely delicious when it finally hits the plate. You can almost taste the signature gooey cheese as they put it on the plate and serve it.
