It wasn't until recently that I learned the secret to peeling ginger, and it doesn't include any sort of fancy kitchen tools. In fact, all you need is a spoon!

According to Duff, the best way to peel ginger is to scrape it with the edge of a small spoon, which will peel away the skin without taking any of the flesh with it. Usually, when you cut it with a knife, you can lose a bunch of the root's flesh, leaving it all uneven and choppy. This leads to a lot of waste, so using a spoon has to be the fastest and most efficient way to peel ginger.
For most cooks, ginger is definitely an essential ingredient, up there with onions and garlic. So next time need a bit of ginger to make that dish pop, try this technique to make sure you get every last piece!
