Throw This Summer’s Most Memorable Barbecue With Easy-To-Make Grilled Ice Cream

When it comes to dessert, I'm a big fan of thinking outside of the box. With a sweet tooth as undiscerning as mine, I'm willing to try just about anything to satisfy my cravings for something sugary. If there is a dessert out there, I'll eat it. I've even gone so far as to try avocado flavored ice cream and healthy frozen yogurt dessert dots. But when I found this amazing dessert recipe from Instructables user BrittLiv, I absolutely couldn't believe it. She has come up with an easy way to make one of the craziest desserts I've ever heard of: grilled ice cream! And the recipe is so simple. All you'll need are:

  • 2 1/2 cups of flour
  • 2/3 cup of butter
  • 1/4 cup of water
  • 1 Tbsp of sugar
  • 1/2 tsp of salt
  • 6 egg whites
  • 2 cups of powdered sugar
  • Ice cream

This delicious treat starts by preparing the dough! Combine 2 1/2 cups of flour, 2/3 cup of butter, 1 Tbsp of sugar, 1/2 tsp of salt, and 1/4 cup of cold water in a mixing bowl and knead with your hands until you have an even dough.

Then be sure to wrap your dough in some plastic wrap and stick in in the fridge. You want to give it about an hour to set.

Next is one of my favorite parts - rolling out the dough! Roll it out and make mini circles using a small rocks glass.

Stick your mini dough circles into a muffin pan and make small fork holes to avoid air bubbles. Now stick the tray in the oven for 40 minutes at 400 degrees. While that's baking, you can move on to the sweet stuff!

It's time to whip up some meringue! Mix 6 egg whites and 2 cups of powdered sugar until you have a nice foam. If you're anything like me, you'll be tempted to lick the extra meringue off the beater. Why not?

When the mini crusts are done in the oven, fill them to the brim with your meringue and add a scoop of your favorite flavor of ice cream on top. She uses vanilla in the photo, but I'd probably opt for mint chocolate chip!

Use more of your meringue foam to cover the ice cream scoop completely. Now it's definitely time to fire up the grill.

Place your treats on the grill. Try to grill them evenly until all sides are slightly browned. It shouldn't take more than four minutes, so be careful not to overcook and melt the ice cream!
