Being a parent means you're literally always rushing around doing something. Something that moms and dads are forever thinking about is, what can we cook for dinner that is relatively healthy, quick, and easy and that the kids will really want to eat? It may not be the first thing that comes to mind because it can be tough to make without the proper oven, but have you considered pizza?
Cooking the perfect pizza at home isn't always a cinch. Parents are always on the hunt for kitchen hacks and tools that will make their lives just a little bit easier. By using the Roccbox, busy moms and dads can create perfectly portioned, deliciously healthy pizzas at home, and the pizzas cook in under 2 minutes! You are more than welcome to make your own dough. But did you know that most pizza restaurants will sell you dough for under $3?! Most grocery stores also carry refrigerated or frozen dough as well.
To help the plight of busy moms and dads all over this great nation, I decided to test out the Roccbox and make three easy pizza recipes, perfect for hectic school-day dinners. Additionally, each of these pizzas is great for next-day school lunches (and lunch for mom and dad, too!).
1. Sliced Veggie Medley Pizza
Sometimes pizza gets a bad rap for not being healthy, but there are actually ways to make a healthier version of your regular big-box pizza chain grease pie. One of the best and easiest mom-approved recipes is to make a sliced veggie-medley pizza using whatever veggies are left in your refrigerator. In the case of this delicious pie, the ingredients are:
- 1 dough, rolled out/stretched
- 1/2 cup shredded mozzarella cheese
- 1/4 cup fresh pizza sauce (canned crushed tomatoes pureed with salt and pepper)
- 1/2 fresh red pepper, sliced thin
- 1/4 purple onion, sliced thin
- Sprinkle of fresh basil
- 4 sliced button mushrooms
- 1 minced garlic clove
- Drizzle of olive oil
- Salt and pepper to taste
2. Simple Margherita Pie
One of the easiest pizza's to re-create at home with your family is a simple margherita pie. The classic flavors are both delicious and familiar, and even your pickiest eater will love it! The ingredients are as follows:
- 1 dough, rolled out/stretched
- 1/2 cup shredded mozzarella cheese
- 1/4 cup fresh pizza sauce (canned crushed tomatoes pureed with salt and pepper)
- 2 balls fresh buffalo mozzarella
- Handful fresh basil leaves
- Drizzle of olive oil
- Salt and pepper to taste
3. Homemade Pesto, Broccolini, and Pepperoni Pizza
OK, so this one didn't come out as beautifully as the other two. We had a few people trying out the dough stretching all at once, BUT the flavor was probably the best! This pizza was also a bit more complicated because we concocted a homemade pesto to use. The ingredients are as follows:
- 1 dough, rolled out/stretched
- 1/2 cup shredded mozzarella cheese
- 1/4 cup fresh pizza sauce (canned crushed tomatoes pureed with salt and pepper)
- 3 tbsps. homemade pesto (recipe)
- 1 stalk Broccolini, chopped
- 6 to 10 pepperoni slices
- Drizzle of olive oil
- Salt and pepper to taste
After eating these easy-to-make pizzas, the best thing to do with the leftovers is to send the kids off to school with ready-made lunches the next day. Easy peasy!
