Seared Diver Scallops With Brown Butter And Herbs

Cook Time: 10 minutes
Preparation Time: 10 minutes
Servings: 2

Ingredients

  • Grapeseed oil
  • Diver (sea) scallops, muscles removed
  • Cold butter, unsalted
  • Fresh sage or thyme
  • Carrot, chopped
  • Small lemon
  • Kosher salt
  • Fresh ground black pepper

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Season scallops with salt and pepper and cook until deep golden brown on 1 side, about 3 minutes.
  3. Turn scallops and add butter and herbs to pan.
  4. Continue cooking, spooning butter over scallops often, until scallops are cooked through and butter is brown and smells nutty, about 3 minutes longer.
  5. Cut lemon in half and add a squeeze.

Place scallops in a dish and spoon brown butter sauce on top. Serve immediately.
