Who doesn't love pumpkin? Its unique flavor is such a comfort. My favorite thing to make with it is pumpkin bread — it's such a great morning breakfast, toasted for a few minutes, and coated in butter. Mmmm!
This pumpkin bread recipe only requires two ingredients — ice cream and flour — which seems fairly unbelievable to me, but it will all make sense in a minute, I promise.

All you'll need is a bowl, a wooden spoon or spatula, a 9"x5" bread pan, and the following ingredients:
- 2 1/4 cups self-rising flour
- 3 cups pumpkin ice cream (melted)
I’m sure you’re dying to know how the ice cream works! The ice cream contains all of the necessary ingredients pre-made: milk, eggs, sugar, and pumpkin flavor.
If you don't have self-rising flour you can use regular flour; just add 3 teaspoons of baking powder and 3/4 teaspoons of salt to compensate.
Yeah, it's hard to believe it's that simple — but look at the results!
