She Chops Up Bacon Into Tiny Pieces. What She Does With It? I’m Drooling…

Society might tell us that summertime demands beach-ready bodies — but personally, I think it demands yummy food!

And I hope I'm not alone in that sentiment, because the dish you're about to see looks way too good to pass up. It definitely has my stomach rumbling. I don't know about you, but potatoes heaped with cheese, bacon, and sour cream is my personal idea of paradise.

That's why I can't wait to try this out. It looks really simple and delicious, and with all the graduation parties I have coming up, this dish is perfect; it's definitely a show-stealer!

Ingredients:

  • 8 medium-sized potatoes, peeled and chopped into 1-inch chunks
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups shredded cheddar cheese
  • 6 slices of bacon, cooked and chopped
  • 1 small onion, chopped
  • 1/2 cup sour cream
  • Green onions or parsley for garnish

Step 1: Preheat your oven to 350 degrees, then place potatoes in a large saucepan. Cover them with water and bring to a boil. Cook over medium-high heat for 15 to 20 minutes or until tender. Drain.

Step 2: Once drained, put the potatoes back in the saucepan and toss with the bacon.

Step 3: In a separate bowl, mix the salt, pepper, cheese, sour cream, and onion. Then, add this mixture to the saucepan with the potatoes and toss thoroughly. (If your casserole will be mashed, this is when you'll want to blend your potatoes with a hand-mixer.)

Step 4: Grease a 2.5- to 3-quart casserole dish with cooking spray or butter, and then spoon the mixture into the dish.

Step 5: Bake for 20 to 25 minutes.

Step 6: Top the dish with the remaining cheese and garnish and let it bake for another 3-5 minutes, or until the cheese has melted.
