This Easy-To-Make BLT Macaroni Salad Is The Perfect Summer Side Dish

Summer is here and it's time to invite the friends and family over to barbecue in the backyard.

I'm always on the lookout for new dishes to impress everybody with. I've tried using Dr. Pepper to make pulled pork. I've impressed everyone with these delicious Brussels sprouts. So naturally, when I saw this recipe for the perfect summer side dish, I knew I had to try it.

This video shows an easy and fast way to make BLT macaroni salad. It's a perfect twist on a traditional dish that will have everybody at my barbecue talking. It's so simple to do!

Ingredients:

  • 16 oz. elbow macaroni
  • 3/4 cup mayonnaise
  • 3 Tbsp. rice vinegar
  • 1 tsp. salt
  • 1/4 cup sour cream
  • 1 1/2 tsp. ground black pepper
  • 1 cup tomato, seeded and diced
  • 1 cup baby spinach, chopped
  • 8 strips bacon

Directions:

  1. Cook macaroni according to package instructions.
  2. Drain macaroni.
  3. Add mayonnaise, rice vinegar, salt, sour cream, ground black pepper, tomatoes, and baby spinach.
  4. Cook bacon until crispy and crumble into small pieces.
  5. Add bacon pieces and toss all ingredients with macaroni until combined.
  6. Cover and refrigerate until ready to serve.
