Fear not, your gut may be right. Reading body language — or the nonverbal communications expressed by physical and facial movements – can occur subconsciously, but it is also a sign of a high emotional intelligence.
Though body language can vary from culture to culture (for example: Americans love their personal space so getting close to a stranger signals intrusiveness, while in France you may find strangers happily sitting closely together), it can be a helpful indicator of what someone is thinking.

Crossed Legs

He may cross his legs to indicate he is bored, disinterested, threatened, or a little insecure.
Touching One Of His Ears

Tugging of the ear usually means someone is contemplating a decision but can't quite decide.
Beard Stroking

Stroking of the chin or beard shows that he is evaluating or dissecting the situation.
Locked Ankles

If the ankles are locked, while sitting or standing, it can signal apprehension or nervousness.

Good Posture

Standing up straight, a trait found commonly in military men, indicates that he is feeling confident and like himself.
Firm Handshake

A firm handshake indicates outward confidence which can mean he is actually confident, alternatively he could be masking deceit or a weak bullying nature.
On the other hand, a weak handshake doesn't expose a "weak person" — rather, they are a red herring and are totally subjective.
