__Cara Cara Orange Salad with Fennel and Pistachio __

Ingredients
- Cara cara, blood, or navel oranges
- Fennel, halved lengthwise, cored and thinly sliced
- lemon, juiced
- Thinly sliced red onion
- Freshly picked mint or tarragon
- Olive oil
- roasted pistachios, roughly chopped
- Kosher salt
- Fresh pepper
Instructions
- To assemble: Cut the oranges into segments.
- Toss the orange, fennel and onion with the lemon juice and olive oil.
- Season with kosher salt and fresh pepper.
- Garnish with the pistachio and fresh herbs.
