These French Toast Bacon Blankets Will Forever Change Your Brunch

Sunday Brunch is my absolute favorite meal of the week. There's nothing quite like inviting friends over for good company and good food, smack dab in the middle of breakfast and lunch. I'm constantly on the lookout for new recipes to try out for my weekly get-togethers with friends. So, when I saw this incredible recipe for Bacon French Toast Roll-Ups, I knew I'd be trying it very, very soon.

I found this delicious-looking dish on RecipeTin Eats. Basically, it's crispy bacon strips nestled within a bread roll-up that's been dipped in an egg-y mixture. Then the whole "blanket" is pan fried until golden brown and enjoyed with a sweet or savory dipping sauce. Umm… yes, please!

Ingredients:

  • 6 slices fresh soft sandwich bread
  • 6 slices of streaky bacon, rind removed
  • 1 Tbsp. butter
  • 1 large egg
  • 2 Tbsp. milk (full cream or low fat)
  • Pinch of salr
  • Cheese or Nutella for dipping (optional)

First, you want to cut the crusts off of the bread. You can use whatever type of bread you'd like (whole wheat, sourdough, etc.) but this recipe uses white bread.

Roll each piece of bread until it's nice and flat. If you don't have a rolling pin, you can use a jar!

Place bacon in a large pan and sear each side on high heat until it's browned, but make sure the bacon isn't too crispy and won't too easily break. Also, save the bacon grease -- you'll need it later!

Place one piece of bacon in the center of each piece of bread. Roll up the bread, ending with the seam side down. Think of it like a Pig-In-A-Blanket, breakfast style.

Whisk egg, milk, and salt in a dish or bowl large enough for a blanket to lie flat. Then, roll the blankets in the egg mixture and coat evenly.

Use the remaining bacon grease to cook the bacon blankets for 3-4 minutes each. Make sure to brown them evenly and rotate in the pan as needed. They should be golden brown.

Serving the blankets with a dip is optional, and here you can get creative. Some people use cheese, while others go for syrup or Nutella. If you want to keep it simple, sprinkle some powdered sugar or cinnamon on top!
