I’m Pretty Much Obsessed With The Almond Chickpea Cookie Dough From Hungryroot

My husband has been traveling, and he's the cook in our family, so when I got a chance to try the Hungryroot meal subscription service, I jumped at it. Hungryroot's whole deal is that they make it ridiculously chill to open up a box of preplanned, easy-to-prepare meals that are both healthy and delicious. What could be wrong with that?

I'm one of those people who gets easily overwhelmed in the kitchen. Even drinking a glass of wine and trying to relax doesn't always keep me from burning myself on a hot pot or knocking over a bottle of olive oil. What can I say? I have other skills.

On the day I heard a knock at the door and saw that my box had been delivered, I was more than ready to give it a shot. I mean, I couldn't keep relying on my friends to invite me over for dinner every night of the week, although that is my preferred paradigm.

On day one of my new life of preparing my own real food, I woke up in the morning and started on my daily routine of taking my pup Zephyr on a walk with my husband. All of a sudden hunger struck, and I immediately had a craving for pancakes. Luckily, when I arrived back from our walk, the Hungryroot box was there on my doorstep!

I quickly unloaded the box and was happily surprised to find the Ancient Grain Pancake Mix among a bunch of other exciting-looking options.

I quickly got to work and made pancakes but included a few additions like almond milk, raspberries, and banana. Of course, I topped it all off with maple syrup (the real kind) and Greek yogurt.

My overall impression was that these pancakes were very fluffy and tasty and that I would definitely be making them again during the week!

Dinner was smoked salmon and riced cauliflower with kale pesto. It was super easy to prepare, but unfortunately neither my husband nor I are smoked salmon fans, so this wasn’t our favorite, but we gave it the ol’ college try. We love the idea of using riced cauliflower more often as a base for some type of protein. Had it been fresh salmon, this meal would have been right up my alley!

On the second day, I had no time to cook breakfast because I had an early presentation for work, so the Purely Elizabeth Blueberry Hemp Granola Bar was an actual lifesaver! This vegan, non-GMO, gluten-free bar tastes like a slice of pie, and it filled me up so I wasn’t hungry during the morning.

With 3 grams of protein and 7 grams of sugar, health-wise it beats most granola bars on the market, which is a huge win!

The real magic happened later that night when I got a craving for something sweet. I had clocked the Almond Chickpea Cookie Dough the moment I received the box and knew this sort of thing would be right up my alley, and boy was I right!

I made a small batch and could smell the deliciousness as they were baking. I then remembered that I had some chocolate ice cream in the freezer, so as soon as I took those suckers out of the oven, I put them on top of a small dish of the ice cream and was basically in baked-good heaven for the next 15 minutes while I watched crappy television and blissed out on chocolately goodness.

The next day, my lunch consisted of an easy-to-throw-together medley of the Seven Grain Blend mixed with stir-fried veggies and Savory Spiced Tofu Bites. I also added sriracha and sesame seeds and a bit of soy sauce. Let me tell you, this was so quick to make and was super-duper delish! I’d eat this weekly. I also ate another one of my cookies — wow!

Also, these Rind dried fruit snacks are so yummy. They’re a perfect nibble between meals and totally satisfy my sugar cravings. They're a mix of pears, apples, and strawberries. I don't think I've ever had this type of dried strawberry before, and I gotta say, I'm into it!

The next day I woke up and decided I absolutely needed those pancakes again. Except for this time, I mashed banana into the batter and added fresh raspberries and crushed walnuts. I also decided whipped cream was a must, so I literally whipped some up and enjoyed my pancakes with that plus maple syrup. I’m hooked!

Something I was brand new to was the Beyond Meat Sausage. I have actually been trying to eat less meat lately, so I was so glad Hungryroot sent me these. They were fantastic paired with the Red Lentil Fusilli. I just sliced up the sausage and paired it with some sauteed spinach and the Superfood Tomato sauce. I also made the Roasting Vegetables With Herbs and ate them on the side.

I had plenty of leftovers and was able to have the same exact thing for my lunch the next day, which made me very happy. It's often difficult to find time to prepare a solid lunch, and this made things super easy for me. The meal reheated well, and I was satisfied!

My experience with Hungryroot was ideal. It was so easy to cook myself healthy, tasty meals that didn't take much time or prep, and I was able to customize based on my needs and preferences at the time of preparation. That's honestly huge for me, because I'm no whiz in the kitchen, and since I didn't have my husband around all the time for help, I had to do it all on my own, and I didn't struggle with that one bit.
