Some people's favorite parts of a big breakfast are the bacon and eggs. But if you ask me, it's all about the pancakes.
Pancakes have always held a special place in my heart, as they're basically a loophole that allows me to enjoy what is essentially dessert for breakfast. It's every kid's dream, and I've never aged out of it.
Most foods that are as good as pancakes will not yield any leftovers. However, since pancakes are so easy, cheap, and fun to make, I always find myself with some left over.
Instead of throwing them out, I began to wonder if there was a way to repurpose these leftovers and make them into something that's different but equally delicious.
Enter the leftover pancake layer cake. This recipe is so easy and good, you'll start making too many pancakes on purpose.
Luckily, no one will be complaining after tasting the delicious layered creation.
Supplies
- leftover pancakes
- 1 package of cream cheese
- 1/4 cup of butter, softened
- 1 tsp. of vanilla extract
- 2 cups powdered sugar
- 1 cup of strawberries
- mixing bowl
- electric mixer
- spatula
- butter knife
Step 1: Whip Frosting Base
Combine the cream cheese, softened butter, and vanilla essence into a mixer bowl.
Turn the mixer on low and beat until the cream cheese and butter are smooth.
Step 2: Add Sugar Gradually
Now it's time to sweeten it up! Continue mixing as you add sugar gradually to the mixture.
Continue until all 2 cups are blended in and the frosting is fluffy and sweet.
Step 3: Slice Strawberries
Cut the strawberries into relatively thin slices that will be able to fit comfortably into a bite.
Step 4: Make First Layer Of Cake
Place the first pancake down onto a plate and frost the top generously, or however much you want!
Step 5: Add Layers
Repeat above step until your layer cake is the desired height, or until you run out of layers!
Step 6: Arrange Strawberries
Arrange the strawberries onto the top layer of the cake. This can be done however you want — it's your layer cake!
Step 7: Enjoy!
Last but not least, slice into the cake and enjoy! It should taste like a yummy cheese cake of your dessert (or breakfast) dreams!
