I come from a meat-eating family. Dinners were always pot roast, beef ribs, or spaghetti with meatballs. If there was ever a special occasion, my mom always grilled us up some steaks.
This was always exciting, especially since she always cooked it perfectly. Whether you liked your rib eye red and bloody, or pink and buttery, you’d always leave the meal thinking you just ate a tiny bit of heaven.
When you would ask what her secret was, she would always respond the same way: “When it’s ready, you just feel it.”
I don’t want to beef about my mom, but I definitely did not inherit her steak senses. In fact, I have a profound ability to take a fine cut of meat, like a filet mignon, and transform it into something as tender as a hockey puck.
Yet, after learning about this fantastic finger trick, that teaches you how to cook a perfect steak at every temperature, , I can’t wait to have a proper steak-off with her next time I visit her.
I’m sure she can still shank my rump when it comes to grilling steaks, but at least with this trick, I’ll have a fighting chance.

Place your finger on your palm, right below your thumb where you feel a little muscle. If you can’t find the spot right away, wiggle your fingers a little bit until you feel some flexing. Once you found the spot, a raw steak should feel as tender as this spot.
To figure out if a steak is rare, keep your finger in the same spot on your palm and touch your thumb to your index finger.

Like your tenderloin medium-rare? Keep your finger where is and touch your thumb to your middle finger.

A medium steak will feel the same way as your ring finger and thumb touching.

Finally, a well-done steak will have the same consistency as your thumb and pinky touching.
