Heart-Shaped Panna Cotta with Macerated Berries

Cook Time: 20 minutes
Preparation Time: 60 minutes
Servings: 4

Ingredients

  • Envelope unflavored gelatin
  • Cold Water
  • Heavy Cream
  • Half and Half
  • Sugar
  • Vanilla extract
  • BERRIES
  • Fresh berries
  • Sugar
  • Cognac, optional

Instructions

  1. In a very small saucepan sprinkle gelatin over water and let stand about 1 minute to soften.
  2. Heat gelatin mixture over low heat until gelatin is dissolved and remove pan from heat.
  3. In a large saucepan bring cream, half and half, and sugar just to a boil over medium- high heat, stirring.
  4. Remove pan from heat and stir in gelatin mixture and vanilla. Divide cream mixture among eight 1/2-cup ramekins and cool to room temperature.
  5. Chill ramekins, covered, at least 4 hours or overnight.
  6. For the berries: If using strawberries, wash, core and slice.
  7. Mix all berries together in a medium bowl with sugar and cognac. Refrigerate for 1 hour, up to overnight.

To Serve: Dip ramekins, individually, into a bowl of hot water for 3 seconds. Run a thin knife around edge of each ramekin and invert ramekin onto center of a small plate.
If using a heart-shaped cutter, immediately cut the panna cotta while still cold so that it holds shape. Spoon berries on top. Enjoy!
