There's no better way to start the morning than with a hearty breakfast. Breakfast is the most important meal of the day, and if you fuel yourself with the right ingredients, you'll be off to a great start every day.
Well, get ready to start your week off right with Gemma Stafford's Bold Baking Breakfast series. In this week's episode, she's making bacon and cheddar cornmeal waffles, which are a great addition to any menu.
When it comes to baking, Stafford can whip up the tastiest meals and treats. (She previously brought us delicious recipes for nutritious homemade granola and a double rainbow surprise cake!)
The great thing about this recipe is that cornmeal works magic in waffles! It sweetens and lends whatever it's blended with a warm, golden glow and also delivers the perfect crunch. When you're finished, you can serve the waffles with bacon, scallions and even scramble eggs on top if you wish.
As Stafford notes, if you have leftover pancakes, you can wrap them up in foil and reheat them in the oven the next day, and they will be lovely.
This is the perfect idea for a Mother's Day brunch. I cannot wait to whip this up in my kitchen.
