There’s nothing I love more than a posh sit-down dinner party. Delicious food, a nice glass of wine, and good conversation—what could be better?
That said, I will almost never host a dinner party. It’s not that I don’t love hosting; I do.
It’s just that I just decided long ago that I would be very strategic in my hosting skills, and stack the deck by specializing in a very specific kind of gathering—brunch.
Everybody but everybody likes some kind of breakfast food. Plus, pulling together amazing cinnamon roll pancakes is just as impressive as perfectly roasting a cut of meat, and it’s about a million times quicker and easier.
In fact, simplicity is key. Just turn up the mellow jazz, mix some mimosas, and you’re practically done.

It’s a twist on traditional eggs Benedict that’s easy, tasty, and the perfect way to get your weekend off to a classy start!

Savory Italian Caprese Eggs Benedict

Preparation Time: 15 minutes
Servings: 2
Ingredients
- 3 egg yolks
- 4 eggs
- 2 Tbsps. lemon juice
- 1 stick butter, melted
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. Cayenne pepper
- 2 English muffins, halved and toasted
- 4 slices buffalo mozzarella
- 4 slices tomato
Instructions
- In double-boiler or over boiling water, combine egg yolks, lemon juice, and butter. Stir thoroughly.
- Add pepper, salt, and Cayenne pepper to the egg mix.
- Stir until mixture begins to curdle, then remove from heat and set aside. This is your Hollandaise sauce.
- Poach additional eggs over boiling water, until they reach desired firmness.
- On each English muffin half, stack one slice of mozzarella, one slice of tomato, and one egg. Top with Hollandaise sauce.
- Serve warm, and enjoy!
