I have to confess: there’s no faster way into my good graces than bringing me baked goods.
I love food, in all of its many delicious forms, and I especially love anything that satisfies my sweet tooth. After all, any day where I get the opportunity to eat cake or pie — or one of these tiny lemon cheesecakes — is a pretty good day in my book!
But, while I love anything sweet, some days there’s just nothing better than a good old-fashioned chocolate chip cookie. Hot out of the oven with a cold glass of milk? There’s nothing better!
The only catch is that, in my experience, everyone likes his or her chocolate chip cookies prepared just a little bit differently. Some people like crispy cookies; some like dense, fluffy cookies; and others prefer thin, chewy cookies.
So how do you know how to tweak your cookie batter to make sure you end up with exactly the type of cookie you crave? Well, turns out it’s pretty simple.
It’s just a matter of changing your ingredients ever so slightly, with a pinch here and a drop there, to find your way to your own, personal, perfect cookie!

Doughy: More Flour
If you bake your cookies with extra flour, they'll be puffier and doughier, and they'll expand up instead of out.
Thin: Granulated Sugar
Use all granulated sugar if you want a cookie that's very thin, flat, and chewy. These will spread out more on the baking sheet, so make sure to space them out!
Crispy and Caramelized: Brown Sugar
For a smaller cookie that's crispy on the edges and chewy in the center, with a caramelized flavor, try using all brown sugar.
Crispy and Thin: Melted Butter
Or, if you like your cookies extra-crispy, crackled on top, and wafer-thin, melt your butter before mixing it in!
Bubbly: Baking Soda
Add baking soda to your batter for a cookie that rises and bubbles slightly as it spreads outward!
Cakey: Baking Powder
Or add baking powder to really make your dough puff up! Perfect if you like your cookies to have a cakey texture!
Chewy: Baking Soda and Baking Powder
If you use both, you'll end up with even more bubbles, but a thinner, chewier cookie!
Dense: Chilled Dough
Meanwhile, if you chill your dough for 24 hours before baking, you'll have a more consistent texture, and a denser cookie.
