$12 Cooking Challenge: Healthy Cooking Expert John Basedow Serves Up Personal Pizzas

Every week on LittleThings’ Facebook Live show Slice, we challenge food experts to create delicious and easy-to-make dinners for less than $12. This week, TV personality and health and nutrition expert John Basedow is being put to the test. 

John is passionate about sharing his health and fitness tips, and on today's show is cooking up a recipe from his Fitness Made Simple nutrition plan that he created when he set out to conquer his cravings for high fat and high calorie pizza.

The result? A pizza recipe that doesn't have to be followed by a dose of obligatory guilt for dessert. John explains, "This is a great recipe that's pleasing to our tastebuds without expanding our waistlines. So it's a win-win."

If you're thinking that a healthy, cheap, and delicious pizza sounds too good to be true, I am very pleased to inform you that this is not a joke. In fact, the evidence is below.

Shopping list:

  • Extra lean ground turkey breast – $5.99
  • Mixed sliced mushrooms, peppers, onions, tomatoes, and spinach – $3.50
  • Fat free whole-grain pita – .99
  • Fat free shredded cheese – .50
  • Total = $10.98

There are plenty of versions of this pizza that can be made, including a Mexican version with black beans and salsa, or substituting tofu for vegetarian, so John’s advice is to just have fun with it!

__John's Fitness-Made-Simple Personal Pizza __

Cook Time: 10 minutes
Preparation Time: 5 minutes
Servings: 1

Ingredients

  • Extra-lean ground turkey breast
  • Mixed mushrooms, peppers, onions, tomatoes, and spinach, diced
  • Fat-free whole-grain pita
  • Fat-free shredded cheese

Instructions

  1. Break the turkey breast into small bits and place in nonstick frying pan, along with diced vegetables.
  2. Turn on medium heat and mix occasionally with a wooden spoon, until turkey breast becomes slightly brown.
  3. Put turkey breast and vegetables on the pita, then sprinkle cheese on top.
  4. Place in microwave and cook until cheese is melted. Enjoy!
