Wrap Bacon Around These Potatoes To Make The Best Side Dish

I'm always trying to come up with new, creative ways to cook potatoes. I'm a sucker for fries, but have recently gotten into baking them.

All my friends have been going absolutely crazy for the latest recipe that I've whipped up. They love how unbelievably crispy and juicy it is, and how creative they could get with mixing the condiments.

I had a leftover pack of bacon in the fridge, and a couple of sweet potatoes left (although you can use whatever you fancy — regular spuds, cassava, or anything you have on hand). With just two steps, you'll be on your way to making something everyone will be craving for weeks.

I made the following dish in under 25 minutes, and the majority of it is set aside for baking. Read on to find out how to speedily put together this amazing side dish.

You'll need only two ingredients: sweet potatoes and a few bacon strips. We decided to use two potatoes, which made more than two servings.

First, slice up the sweet potatoes. The standard width should be that of your pinky finger.

But you can also prepare them in a variety of sizes, like we did.

Next, slice each bacon strip in half to make two thinner pieces.

Then, wrap each piece of bacon around a potato finger in a spiral pattern.

The grease on the bacon can make this a little tricky. If parts of the bacon come apart, don't worry! When you're just about done wrapping the bacon strips, preheat the oven to 420 degrees, for around 10 minutes.

After lining them on parchment paper, bake the potatoes for 15 minutes at 420 °F.

Afterward, broil for about 2 minutes, or until the top of the bacon is completely crispy.

And there you have it! You can get creative with the dipping sauces for the fries. We loved ketchup, honey, and barbecue sauce.
