Growing up, one of my favorite types of food were meatballs.
They are just so delicious, and there really are so many different ways to make them. I am always on the lookout for new recipes to try, so when I saw these unbelievable BBQ bacon-wrapped macaroni and cheese-stuffed meatballs, I knew I would absolutely be making them.
In fact, I decided to try this recipe right here in the LittleThings office. Needless to say, a lot of co-workers came wandering over to investigate the amazing smell of bacon and barbecue sauce. And not only were the results a beautiful sight to behold, they truly were one of the tastiest dishes I've had in a very long time!
This recipe was so simple to follow, and it took barely any time at all.
Ingredients:
- 1 1/2 lbs ground beef
- 1 onion
- 1 egg
- 1/3 cup panko bread crumbs
- 1/2 cup cheddar cheese, shredded
- 1.5 oz. cheddar cheese, cubed
- 1 cup macaroni and cheese, prepared and chilled
- 4 Tbsp. barbecue sauce
- Bacon (optional)
This tasty take on meatballs has quickly become a favorite for all of us here in the LittleThings office — and I most certainly will be making them for my next barbecue!

To start making these delicious BBQ mac and cheese meatballs, preheat the oven to 400 °F.
Next, finely chop half of an onion.
Put the ground beef in a medium-sized mixing bowl and add the egg.
Add the bread crumbs and chopped onion.
Add the shredded cheese and mix thoroughly.
Divide the ground beef into 9 equal parts. Flatten out one piece on a plate and place a scoop of macaroni and cheese in the middle.
Top the mac and cheese with one cube of cheddar and fold the sides up.
Pinch the top to seal it completely.
Roll the beef into a meatball.
Repeat with each meatball and place on a baking sheet.
Brush the meatballs generously with barbecue sauce.
Once the oven has heated to 400 degrees, place the tray inside.
Bake the meatballs for about 15 minutes. Then, remove the tray from the oven. Don't worry — you aren't done yet!
Now comes the REALLY fun part. For anybody who wants an extra treat, wrap their meatballs with two pieces of uncooked bacon.
Utilize a toothpick to hold the bacon in place. Return the tray to the oven for an additional 10–15 minutes, depending on how well done you want your meatballs.
The results? For those who wanted their meatballs bacon-less, they are in for a delicious treat.
You may not want to warn them about the meatball's contents so they can be surprised!
And for those bacon lovers who wanted their mac and cheese meatballs with one extra tasty step?
The results are basically a life-changing experience!
In no time at all, you will have these decadent BBQ bacon-wrapped macaroni-and-cheese-stuffed meatballs — an unbelievably delicious dish!
