Ingredients:
2 cans drained green chiles
1 lb. coarsely grated Monterey jack cheese

4 egg yolks
2/3 cup canned evaporated milk
1 Tbsp. flour
1/2 tsp. salt

McCall's Great American Recipe Card Collection explains that you should first preheat your oven to 325 °F, then take the seeds out of the chiles and dice them. Combine the cheese and chiles in a large bowl and then pour into a buttered casserole pan.
Next, slowly mix the egg whites until they form puffy, stiff peaks. In a separate bowl, mix the yolks, milk, flour, and salt and pepper to taste, then fold carefully into the egg whites. Pour over the cheese and use a fork to fully combine the mixture.
Bake for 30 minutes, add the sliced tomatoes on top, then bake for another 30 minutes.

Cover the skillet and put into the oven for about 15 minutes, then lower the heat to 200 °F and allow to cook for another 25 minutes.
4. Rock Hudson's Cannolis
![recipe-4.jpg](https://littlethings.com/wp-content/uploads/2024/09/recipe-4.jpg)
Ingredients:
3 lbs. ricotta
1-3/4 cups confectioner’s sugar
1/2 tsp. cinnamon
2 Tbsps. chopped citron
1/4 cup semi-sweet chocolate chips
4 cups flour
1 Tbsp. sugar
1/4 tsp. additional cinnamon
3/4 cup Italian red wine
Instructions:
As described in The Dead Celebrity Cookbook, the hunky actor would start by beating the ricotta in a large bowl with an electric mixer for about one minute. Add the confectioner's sugar and continue to beat until light and creamy, then add cinnamon, chopped citron, and chocolate chips until totally combined and pop it in the fridge to chill.
For the shells, sift flour, sugar, and additional cinnamon into a large bowl, then add wine and mix until combined. Knead the dough on a floured countertop for about 15 minutes or until smooth and stiff. Cover and allow to cool down for about two hours.
When the dough is ready, roll out onto flour as thin as you can make it and cut 5-inch circles. Wrap the circles loosely over cannoli tubes and seal with an egg wash. Deep fry two at a time for about a minute each or until light brown. Remove and place them on a paper towel and allow time to cool before filling with ricotta mixture.

Instructions:
The crooner was famous for two things — his impeccable pipes and his take on this classic Italian dish that's been passed down over the years, most recently in an issue of Vanity Fair.
For the sauce, simply combine all of the ingredients in a large pot over heat and allow to simmer over low heat.
While that's cooking, combine the flour and salt in a bowl and dip your egg-washed eggplants to coat with flour. Place in a skillet and sauté each side in hot oil until brown. Drain the excess oil with paper towels and line the bottom of a baking dish with the veggies.
Sprinkle the cheeses on top, saving some of the mozzarella for later, and cover with half of your sauce. Place triangle chunks of the remaining mozzarella on top and repeat the layers with the rest of your eggplant. Bake at 400 °F for 15-20 minutes.
