Due to popular demand, "Channel Cheese TV" uploaded to YouTube its extended, unedited footage of Italian cheese master Carlo Guffanti cracking open a huge parmesan. And since this video was uploaded in 2012, it's been viewed over four million times! That's a lot of people watching a wheel of cheese break open, but trust me — it's a pretty fascinating video.
Guffanti introduces viewers to a massive two-year-old wheel of parmesan from Trento, Italy that passed inspection in 2009. According to Parmesan.com, "Parmigiano Reggiano wheels that pass inspection — and nearly all do — are fire branded with the oval Consorzio Tutela Parmigiano Reggiano certification mark." First, Guffanti must break the wheel in half down the middle, which is a feat all in itself. He then proceeds to continue breaking down the wheel in the same manner, using his knives to create perfectly proportionate portions of parmesan. Say that five times fast.
By the end of the process, Alison realizes that watching Guffanti is like watching an artist at work. What he does takes skill, patience, strength and precision.
