If you love corn on the cob, but have grown tired of traditional butter and salt, these six recipes are sure to spice things up a bit. All you'll need are a slow cooker, some aluminum foil, and a few simple ingredients, and you'll be enjoying fresh, delicious corn in no time!
Recipe #1: Traditional
- Olive oil
- Sea salt
- Black pepper
Brush your entire cob in olive oil. If you don't have olive oil, or simply don't prefer it, you can use butter, too.
Then, sprinkle it with salt and pepper — and you're done! Wrap it up in foil and set it aside.
Recipe #2: Herb
- Olive oil
- Sea salt
- Black pepper
- Thyme, dill, sage, tarragon, basil, dill, rosemary, or oregano
You can use any herbs you want, dried or fresh. We used dried oregano, and it was delicious.
Recipe #3: Chili and Lime
- Olive oil
- Chili powder
- Ground cumin
- Fresh lime
- Sea salt
- Black pepper
Drizzle on as much lime as you'd like. (Note that a full lime has enough juice for a few cobs.)
It's the perfect side dish for taco or quesadilla night!
Recipe #4: Curry Coconut
- Coconut milk
- Curry powder
- Garlic powder
- Sea salt
- Black pepper
For this recipe, instead of olive oil, brush on canned coconut milk. It might seem a little strange, but it's delicious!
After brushing on your coconut milk and sprinkling on some curry, add a dash of garlic powder to taste. This is one flavorful ear of corn!
Recipe #5: Sriracha
Again, no olive oil for this cob. All this spicy recipe needs is some sriracha!
This corn's flavor is as bold as its color!
Recipe #6: Pesto
Since pesto is made of olive oil, no need to add it to this recipe either. Just spoon on some pesto and spread it evenly.
When all your cobs are dressed and ready, wrap them tightly and label the foil, just so you don't get the flavors mixed up.
Set the wrapped cobs in your dry slow cooker. If you're preparing 4 to 6 cobs, cook for 2 hours on high; 4 hours on low. For 8 to 10 cobs, cook for 3 hours on high; 5 hours on low.
Note: these instructions might vary depending on the shape, size, and model of your slow cooker!
When your cobs are all done, remove them very carefully, as their foil might be hot. Take care when opening them up too.
Serve them alongside your favorite dishes, and enjoy! (Our favorites were the sriracha and the chili lime.)
