These Delicious Lime Sangria Ice Pops Are The Perfect Summertime Dessert!

During the summer, I try to pack my weekends with as many fun activities as possible.

Summer Saturdays and Sundays are perfect for going on hikes, antiquing, and barbecuing in the backyard. And this summer, I have been on the lookout for delicious snacks that I can make and enjoy on my fun-filled weekends. So when I found this amazingly easy recipe, I knew I had to try it.

These lime sangria ice pops are the perfect treat to mark the end of a long week. We decided to kickoff the weekend by trying this simple recipe right here in the LittleThings office. The results? Everyone absolutely loved these delicious summer pops.

Ingredients:

  • 6 oz. raspberries
  • 1 cup sugar
  • 2 limes
  • 1 1/3 cups white wine

Now that we’ve tried these in the office, I will definitely be making this recipe again. Weekends will be even tastier with my new favorite summer dessert!

Measure out 6 ounces of raspberries. (We recommend immediately snacking on any leftovers!)

Next, mash the berries well.

Measure 1/2 cup of sugar in a measuring cup and add in the mashed raspberries.

Mix the sugar and raspberries thoroughly.

Place the mixture in the microwave for 1 minute on high to help bind the sugar and the raspberries.

While your raspberry mixture heats, juice 2 limes.

Add the remaining 1/2 cup of sugar, stir, and let sit for about 5 minutes to dissolve.

Combine the sugar-lime juice, 1 1/3 cups of white wine, and the raspberry mixture. Stir very well.

Pour your popsicle mixture into an ice pop tray.

Cover the tray and insert popsicle sticks.
