How To DIY An Easy And Elegant Easter Dinner Party

Vanessa's menu involves seared lamb chops with fresh herb pesto and a side of pan-roasted asparagus with shaved Parmesan. She recommends the meal to be accompanied by a sparkling limoncello cocktail and followed by strawberry shortcakes with buttermilk biscuits.

__Seared Lamb Chops with Fresh Herb Pesto __

Cook Time: 10 minutes
Preparation Time: 10 minutes

Ingredients

  • Center-cut lamb chops
  • High heat oil, such as grapeseed oil
  • Kosher salt
  • Black pepper
  • Chopped basil
  • Chopped mint
  • Chopped tarragon
  • Chopped parsley
  • Minced garlic
  • Extra-virgin olive oil

Instructions

  1. Preheat a sauté pan with the grapeseed oil until it just beings to smoke.
  2. Season the lamb with salt and pepper.
  3. Sear the lamb on all sides and finish in the oven until desired doneness (about 5 to 7 minutes for medium-rare).
  4. Prepare the herb pesto by combining all the chopped herbs and minced garlic. Add salt and pepper to taste.
  5. To serve, present the chops with the herb pesto drizzled on top.
