Funfetti cake mix has become quite the rage over the past few years. Everywhere you go there's another cake filled with sprinkles and dots of brightly colored goodness. And really, can you blame us? This stuff is so yummy, it's hard not to love it.
But what if I told you that you could bring the crazy-good taste of Funfetti cake into your breakfast routine by whipping up a batch of super-easy Funfetti pancakes? You'd like that, right? Well, thanks to the folks at PopSugar Food, that's exactly what we're going to do.
Follow along with the below video as we combine two fantastic tastes. All you need for this recipe are some basic pancake ingredients as well as a box of Pillsbury Funfetti cake mix and some rainbow sprinkles.
First, mix up the dry pancake ingredients in a large mixing bowl. That's your baking powder, flour, sugar, and salt. Then, add a whole box of the Funfetti cake mix. Put that bowl aside and grab another large both for the wet ingredients.
In that second bowl, combine the canola oil, eggs, and milk (the exact amount of each item is listed in the YouTube video description). Mix those up well and add the wet ingredients to the dry ingredients. Mix it up until it's all combined into a nice batter.
Now just add as many sprinkles as you'd like and fold them into the batter mix.
Heat up your griddle or frying pan, hit it with a little non-stick cooking spray, and make your pancakes just like you would any other type of pancake. See the bubbles? That means it's time to flip. You know the deal.
Because these pancakes are so sweet, you'll probably want to hold off on the syrup, but feel free to top your short stack with some additional sprinkles and little whipped cream.
