Bone-In Pork Chops With Alabama-Style BBQ Sauce Will Take Your Dinner To The Next Level!

What I loved most about this recipe was the history behind the white BBQ sauce. According to Home Chef: "In 1925, a railway worker from Alabama named 'Big Bob' Gibson set up a makeshift table to serve BBQ to his neighbors and fellow laborers. What set his 'cue apart was the tangy white sauce that people came from miles around to enjoy. He went on to open a restaurant in Decatur, Alabama, which, along with his unique sauce, endures to this day."

Bone-In Pork Chops With Alabama-Style BBQ Sauce

Ingredients

  • 2 bone-in pork chops (8 oz.)
  • 1 Granny Smith apple
  • Green beans (8 oz.)
  • 3 Tbsps. apple cider vinegar
  • 2 tsps. sugar
  • Slaw mix (8 oz.)
  • Mayonnaise (1.875 oz.)
  • 1 tsp. Dijon mustard
  • 5 tsps. cracked black pepper

Instructions

  1. Trim ends of green beans.
  2. Core apple and cut into 1/4-inch slices. Stack slices and cut into matchsticks.
  3. Rinse pork chops, pat dry, and season with a 1/4 tsp. salt and a pinch of pepper.
  4. To make the slaw, whisk together 2 Tbsps. olive oil, apple cider vinegar, and sugar in a bowl.
  5. Add slaw mix and apple to the bowl, and season with 1/4 tsp. salt and a pinch of pepper. Toss to coat and set aside.
  6. To cook the pork chops, heat grill over medium-high heat. Drizzle pork chops with 1 tsp. olive oil and grill for 4 to 5 minutes per side. Set aside to rest for 5 minutes.
  7. To make white BBQ sauce: mix together mayo, remaining apple cider vinegar, Dijon mustard, cracked black pepper, and 2 Tbsps. water in a small bowl. Set aside.
  8. In another pan, heat 1 tsp. olive oil over medium-high heat. Add green beans and cook 3 to 4 minutes. Season with 1/4 tsp. salt and a pinch of pepper.
  9. Plate the dish: place a serving of slaw and green beans on a plate. Pour white BBQ sauce in front and serve pork chops in sauce.
