With summertime full of picnics and outdoor parties, I am constantly trying to figure out fun, new dessert ideas. Flipping through cookbooks helps, but sometimes there is much more enjoyment in bringing something unexpected and new.
I've tried so many types of cake recipes over the years, but recently, I stumbled on a new recipe that quite literally "takes the cake:" Coca-Cola Push-Up Pops.
Sure, Coca-Cola can be a refreshing beverage on a hot day, but it can also be a good ingredient to cook with — and these sweet treats really are the perfect dessert to make for any summer party or get-together.
Luckily, the recipe is really easy to follow, and I know the end result would be something even the kids would gobble up. These push-up pops are delicious creations your whole family will love. What’s best is that they’re a ton of fun to make, too!

What You Need:
- 1 box of chocolate cake mix
- 3 eggs
- 1/2 cup vegetable oil
- 1 1/4 cups water
- 1 cup of Coca-Cola (not diet!)
- Reddi-wip
- Maraschino cherries with stems
- Push-up Cake Pop containers
Preheat the oven to 325 °F. Generously spray the inside of a 9×13-inch baking sheet.
1. Prepare cake according to package directions.
In a large bowl, mix together cake mix, 3 eggs, 1/2 cup vegetable oil, and 1 1/4 cups water.
2. Pour in 1 cup of Coca-Cola, and stir until everything is evenly mixed together.
3. Once all mixed together, pour into a shallow 9x13-inch baking sheet. Make sure the batter is evenly spread out.
4. Pop into the oven and cook for approx. 20 minutes (until a toothpick inserted into the cake comes out clean).
5. When the cake has cooled, use an empty push-up pop container as a cookie cutter to create cake circles.
Set aside on a piece of waxed paper.
6. To assemble, press a cake circle into the bottom of the push-up pop container.
7. Then add in a swirl of whipped cream.
8. Add another layer of cake and whipped cream.
9. Top with a stemmed maraschino cherry. Serve immediately or refrigerate.
Bring them to your next picnic or outdoor party, and they're sure to be a hit!
I set up my cake pops in an adorable vintage Coca-Cola bucket. (In order to get the pops to stay upright and not fall over, I inserted a cake pop stand into the bucket.)
This is the perfect summertime treat to cool off while satisfying your sweet tooth. Plus, it's a creative way to treat your guests at a summer cookout.
