This Rainbow Cake Is Beautiful AND Delicious. And At The Center? A Tasty Surprise!

I love going to birthday parties. Everyone is always in a great mood and ready to celebrate.

And the best part of any birthday party, of course, is the birthday cake. So when I saw this rainbow bombe cake with a colorful ice cream surprise in the middle, I knew I definitely had to make one.

This cake is almost too beautiful to eat. Almost. The recipe doesn't take too long at all, and the final result is absolutely delicious.

Here's what you need:

Tools and Supplies:

  • Jelly roll pan
  • Parchment paper
  • Food coloring
  • Stand mixer
  • Towel
  • 6 small bowls or ramekins
  • Freezer-proof bowl
  • Plastic wrap

For The Cake:

  • 1 cup cake flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 2 eggs
  • 3/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 2 Tbsp. whole milk
  • 1/2 cup confectioners’ sugar
  • 1/2 gallon ice cream

For The Buttercream:

  • 2 sticks butter
  • 6–8 cups confectioners’ sugar
  • 1 tsp. vanilla extract
  • Pinch of salt
  • Cream or milk to thin, if needed

To make the buttercream, start by creaming the butter in a stand mixer for 2 minutes on high. Stir in the confectioners' sugar, vanilla, and salt. Add milk or cream if it is still too thick. Divide into 6 bowls and tint each with different food coloring.

Covering the bowls and setting them aside, it's time to start on the roll cake. Preheat the oven to 375 °F. Mix the flour, baking powder, and salt in a bowl. In a separate bowl, use a stand mixer to combine the eggs and sugar, stirring in the vanilla, milk, and the bowl of dry ingredients.

Spread the batter on a jelly roll pan lined with parchment paper. Bake for 5–10 minutes, being sure not to make the roll too brown. Dust a clean towel with confectioners' sugar, turn the cake on the towel, and roll it.

After letting the cake cool for 10 minutes, unroll the cake and cut it into 6 strips of equal size. Spread one color of buttercream onto each of the cake strips. There should be a little buttercream leftover which should be put to the side.

Roll each cake strip like a jelly roll. These should slightly resemble mini rainbow-colored burritos! Place the rolls in the freezer for 30 minutes to firm up a bit.

Remove the rolls from the freezer and slice them into smaller pieces. Each slice should be about 1/4 inch thick.

If you're like me, you'll be tempted to eat these mini buttercream rolls. You can sneak one or two, but you'll need most of them for your cake!

Line a bowl with plastic wrap and place the rolls around the entire surface. Place the bowl in the freezer to firm up for 15 minutes.

Scoop ice cream into the bowl almost to the top. In between scoops of ice cream, add the leftover buttercream for an added colorful surprise later on!

Use the remaining rolls to form a top layer to the bowl. Cover the bowl with plastic wrap and place it in the freezer for several hours.
