Why’d She Rub Corn Starch On A Piece Of Steak? What A GREAT Secret!

A little while back, we learned how to do cook an amazing steak by using the "Reverse Sear" technique. But as it turns out, there are several unique ways to put your steak skills to the test, and this one works just as deliciously!

Getting a perfect sear without overcooking a steak can be tough. In this clip from the America's Test Kitchen Cooking School, Bridget Lancaster teaches the Test Kitchen's secret technique for perfectly seared steaks — and the first main step involves a combination of corn starch and Kosher salt.

Using well-marbled boneless strip steak, Bridget notes the steaks must first be dried before cooking. She blots away any moisture from the steaks using a towel. Then, Bridget coats the steak with a table spoon of corn starch mixed with two tablespoons of Kosher salt. The reasoning behind the technique is that any moisture on the steak will cause steaming instead of browning. So, the corn starch mix creates a super dry surface.
