Summer is here and it is time to plan the perfect barbecue menu.
Obviously, I'll have my grill fired up to make burgers and bacon-wrapped hot dogs. But I'm more concerned with what to serve as a tasty side dish. So when I saw this amazing new way of making Brussels sprouts using onions and walnuts, I knew I had to try it.
Luckily, this recipe couldn't be easier.
All you'll need are:
- 8 cups quartered Brussels sprouts
- 1 onion, chopped
- 1 red onion, chopped
- 4 cloves garlic, chopped
- 2 Tbsp. olive oil
- Kosher salt and pepper
- 1/2 cup walnuts
Preheat the oven to 350 °F.
In a large bowl, combine the Brussels sprouts, onion, red onion, garlic, olive oil, salt and pepper. Toss to combine and season as desired.
Place the bowl in the oven and bake for 17 minutes, or until Brussels sprouts being to become crispy.
While the Brussels sprouts are baking, toast the walnuts for 4–5 minutes in a pan over medium-high heat, stirring frequently so they don't burn.
Remove the bowl from the oven and top with the walnuts. Be sure to serve hot.
