We're no stranger to baking whiz Gemma Stafford here at LittleThings. She's given us more incredible cooking advise than we have room in our cookbooks for. But in a new episode on her YouTube channel, Gemma brings us the ultimate in summer desserts: Homemade Disneyland Dole Whip. And the best part? It's even vegan and can be made dairy-free (but no one needs to know).
On a recent trip to the fairytale land of Disneyland, Gemma had a treat she loved so much that she had to try making it herself. After sharing footage from her trip with her husband Gemma hit up the staple dessert of all Disney-centric theme parks: Dole Whip. For those unfamiliar, Dole Whip is a pineapple-flavored soft serve, and Gemma paired down the recipe to keep all the flavor but nix any extra stuff. With just two ingredients, it's the simplest dessert recipe you'll have in your kitchen.
Using a food processor or blender, Gemma instructs viewers to blend 4 cups of frozen pineapple for the base (the pineapple must be frozen for the recipe to work) with 1 cup of low fat coconut milk (or regular milk, if you prefer that instead). Blend until it's consistently whipped throughout. It's that easy!
