  • graham crackers
  • unsalted butter
  • brown sugar
  • pinch of salt
  • fresh blueberries
  • juice from 1/2 lemon
  • cold water
  • granulated sugar
  • cornstarch
  • packs of cream cheese
  • vanilla extract
  • powdered sugar
  • heavy cream
  • lemon zest

Instructions

  1. Make crust by combining crushed graham crackers, melted butter, brown sugar, and salt.
  2. Make blueberry sauce by combining combine blueberries, lemon juice, and granulated sugar over low heat. Then add cornstarch slurry.
  3. Whisk cream cheese together with powdered sugar and vanilla extract.
  4. Whip cream, then combine it with cream cheese mixture.
  5. Layer crust, cream cheese mixture, and blueberry sauce in Mason jar.
  6. Top cheesecake with lemon zest, then close Mason jar and label it.

  • 3 tbsp. brown sugar

  • 2.5 cups fresh blueberries

  • 2 8-oz. packs of cream cheese

  • ¾ cup powdered sugar
  • ¾ cup heavy cream

Step 1: Make The Crust

The first step to making this delicious cheesecake is creating the crust.

Begin by crushing the graham crackers in a bowl.

Once the graham crackers are sufficiently crushed, mix in the melted butter, brown sugar, and salt.

Set this bowl aside for now — you won't need it until you start putting layers in the jar.

Step 2: Make The Blueberry Sauce

Next, make the blueberry topping.

In a small pot, combine blueberries, lemon juice, and granulated sugar. Put the pot over low heat, and stir until the blueberries start to break down.

While the blueberries are heating, stir together cornstarch and water to make a slurry.

When the blueberries begin breaking down, pour in the slurry and continue to stir until the topping becomes thickened.

In a separate bowl, whisk the cream cheese until it is smooth.

Once the cream cheese is smooth, add in vanilla extract and powdered sugar, then whisk until combined.

Step 4: Make Some Whipped Cream

In another bowl, whisk the heavy cream until it is thick.

To whip the cream, you can use a hand whisk or an electric mixer.

Step 5: Combine Whipped Cream And Cream Cheese Mixture

When the whipped cream is thick enough, dump it into the cream cheese mixture.

Using a whisk or spatula, stir until combined.

Step 6: Spoon Crust Into Mason Jar

Once your separate ingredients are all made, pick out a Mason jar to store your cheesecake in.

Begin by spooning 3 tbsps. of the crust into the bottom of the Mason jar. Push the crust down with a spoon.

Next, scoop two heaping spoonfuls of the cream cheese and whipped cream mixture into the Mason jar.

Next, layer 2 tbsps. of the blueberry topping over the cheesecake filling.
